It was born from the experience we’ve accumulated by engaging directly with the fishing industry, reflecting on the value of our ingredients, and building connections with the many people involved in the food industry—all of which came together in the form of a single bowl of ramen. Our goal was to serve a bowl of ramen that goes beyond mere novelty to become a truly memorable experience.
Our Journey in the Fisheries Industry
Throughout our work in the seafood distribution industry, we have witnessed the various stages involved in bringing ingredients to our tables—from ports and fishing harbors across Japan to aquaculture sites, and on to distribution and export. Ingredients cannot be fully understood simply by their appearance on the table; we want to convey their true value by sharing the story of where they were raised, whose hands they passed through, and the background behind their journey.
As we traveled to locations across the country, personally sourcing ingredients and building connections with people to identify true value, we came to realize that there are still many hidden charms and underappreciated qualities out there. It is precisely this experience that forms the foundation of RAMEN Ebino Megami.
I wanted to convey the true value of the ingredients more directly
Working in the retail industry, there are times when even high-quality ingredients fail to fully convey their appeal. No matter how valuable the ingredients may be, it’s not easy to convey their background and true nature directly to consumers. That’s why we began exploring ways to communicate the value of these ingredients more deeply and accurately.
One of the answers was to deliver that experience directly through our food. We wanted people to taste the power and wonder of our ingredients—things that words alone cannot fully convey—and experience them firsthand. That idea eventually led us to the decision to open a restaurant.
Why I Chose Ramen
We chose ramen—a dish beloved by so many. Precisely because it is such an everyday dish, we believed that by harnessing the power of our ingredients and applying meticulous craftsmanship, we could transform it into something truly remarkable. We wanted to create a dish that feels familiar at first, yet reveals its uniqueness with every bite—and it was this vision that gradually shaped the concept of “The Shrimp Goddess.”
Our goal was not simply to create a dish that satisfies hunger, but to craft a bowl of ramen that allows you to truly appreciate the ingredients and savor every nuance of its aroma and aftertaste. We wanted to create an experience that goes beyond the first bite and lingers in your memory long after you’ve finished eating. This philosophy is at the heart of everything we do at RAMEN Ebino Megami.
I wanted to open this shop in Namba
We chose Namba, Osaka, as the location for our restaurant. We believed that in this bustling neighborhood—open to both locals and tourists alike—we could share the dishes we want to serve with as many people as possible. Whether you’re stopping by for a quick meal or making a special trip to visit us, we want to provide a memorable experience. It was with this vision in mind that we decided to open our restaurant here.

Combining the experience we’ve gained in the fishing industry with our desire to convey the true value of our ingredients more directly, RAMEN Ebino Megami was born in June 2024. When designing the restaurant, our priority wasn’t to create a buzz, but to ensure that the appeal of our ingredients comes through clearly and that every bowl leaves a lasting impression on our customers.
In every bowl of ramen, we weave together the experience gained from the kitchens we’ve worked in, our respect for the ingredients, and our care for our customers—Ebino Megami is a restaurant born from this accumulation of dedication.
